 What is Wagyu?

Wagyu is a Japanese beef cattle Breed that is derived from native Asian cattle. Wagyu quite literally means (Wa) Japanese (Gyu) Cow. Most people are familiar with the term Kobe beef. Kobe is only from a certain area in Japan, that is certified as Kobe Wagyu beef. 

Wagyu were originally draft animals that were used in agriculture. They were selected for their physical endurance. We would add that they would seem to be very easy to use because of their calm nature and their eager to please. They were favored because of their intra- muscular fat cells, or marbling, that provided a readily available energy source. They are a horned breed that can either be black or red in color- we only have black wagyu. 

In 1997, Japan declared that  Wagyu was a national treasure, and they banned any further exportation of the cattle, which means that they largely control the market on wagyu beef.

What makes Wagyu meat so special? Well for starters, it melts in your mouth- literally. On top of being delicious, Wagyu has health benefits too! . The meat is full of good fats , the fat marbling in the meat makes the meat tender when it cooks, but does not have have the negative health benefits. It can also help lower cholesterol with the amount of monounsaturated fat that is in the meat. We can also mention that it packs a protein punch, in creases iron, is low calorie and has just the right amount  of sodium in it!
